I want to be a good chef
Two important factors influencing my goals are my children and my mother. Firstly, I am currently the mother of two children. My life has changed dramatically as I became a mother after I married. I started to be interested in cooking, health, and the well-being of my children. I started to identify better organic ingredients and studied cooking equipment and ingredients. Also, I now enjoy constantly collecting and analyzing healthy and nutritious recipes. Secondly, my mother is the owner-chef of a Japanese restaurant, so I often worked to help her in her restaurant. Working in there included everything from serving, plating, purchasing ingredients, simple cooking, and cashier. These are the starting points of my cooking life.
Culinary is my life
Like the photo above, I am always cooking in real life. I enjoy not only Korean food, but also Japanese cuisine. Also, I am learning baking for the first time this fall semester, which is very interesting. Finally, I want to learn a variety of dishes and expand my cooking range.

1. Topic in nutrition that I am interested in
and one that I would like to learn more about
The topic I am most interested in nutrition is a healthy diet. Specifically, daily diet is a more important factor in our lives than ever because many people's interests these days are well-being, health, and immunity. The benefits of a healthy diet are so many; it is essential to people's health and nutrition and at the same time protects people from chronic diseases. Also, it reduces the risk of developing some cancers, maintains a healthy weight, and prevents obesity or being overweight; in addition, it improves people's mental health as well as gut health and improves memory. A healthy diet includes nutrient-rich foods from all major food groups, including protein, generally low in fat, whole grains, healthy fats, and colorful fruits and vegetables (Knott, 2020). Throughout my learning about diets in nutrition classes, I thought very much about what my daily eating habits were mainly and which diet would benefit me and my family. Above all, Diet Analysis Assignment was very helpful to compare and analyze my daily diet habits. For example, instead of buying processed foods like cookies and chocolates at the mart, I started choosing foods with a lot of fresh phytochemicals, and the eating habit was changing little by little; I usually enjoyed coffee and breakfast sandwiches at Starbucks once or twice a week, but figures (iProfile) show that the diet consisted of fruits, vegetables, and nuts is much more nutritionally balanced than Starbucks' coffee and breakfast sandwiches; for instance, a plant-based diet is about one-third of the calories compared to Starbucks' coffee and breakfast sandwiches, while higher vitamin A 34 times, vitamin C 2 times, potassium 484 times, and fiber 4 times. In contrast, the sodium content is 1/158, which is relatively low. Also, I realized that the nutrients that my body intakes from instant noodles and seaweed soup are very different; seaweed soup is about twice as high in calories as instant noodles, but rather contains vitamins A and C, potassium, calcium, and zinc at least 4 to 30 times more. Finally, the part I want to learn more about nutrition is the essential nutrients and the foods that contain them, and ultimately, I want to know how to get them appropriately. This is because a balanced diet must contain a variety of foods in specific amounts and proportions based on accurate information on essential nutrients. As a result, I want to consistently plan a healthy daily diet through in-depth analysis and research for my well-being life.

2. Does nutrition will play a more important role currently and in the future in the culinary industry?
I am confident that nutrition will play an important role in the culinary industry now and in the future. Currently, the craving for a healthy life is a concern of many, and many restaurant clienteles consider nutrition and overall satisfaction in menu choice as a primary factor (Familydoctor.org, 2020). Today, the food and the culinary industry is evolving very quickly. Food industry leaders and chefs are trying and implementing change for a healthier and more sustainable food future. Firstly, the biggest trend currently driving change in the food and beverage industry is transparency; for example, consumers want to know and understand exactly what ingredients are in their products or dishes and how they are cooked in a restaurant (Olayanju, 2019). Changing our eating habits can be difficult, but small changes in our life can make huge and consequential differences; for instance, even the same ingredients can have different effects on health depending on how they are cooked. Rather than frying fish or meat, steaming or braising after removing all unnecessary fat can be beneficial to our body (Familydoctor.org, 2020). Secondly, there is a growing demand from customers for plant foods; plant-based, non-dairy substitutes are currently driving major changes in the culinary industry (Edlong, 2019). Plant-based cuisine is a long-term sustainable option for the environment, people, and benefits; at the same time, this is a lifestyle shift that can dramatically change consumer choices. In practice, many restaurants have options on the vegan diet and offer a variety of dishes for vegetarians. If someone has an illness that may be exacerbated by eating or drinking, changing diet habits may also help. Almost everyone can benefit from reducing unhealthy things, and I think the ideal option is a plant-based diet for all these things. Finally, today, people have a very strong desire to protect their health from diseases such as chronic diseases and cancer, and they tend to prioritize mental, social, and physical health in their lives. In other words, health and well-being are trends that have become fundamental drivers of food and beverage change around the world, and I expect this trend to continue as well as accelerate in the future; for example, healthy organic salad cafes have appeared and are gaining popularity in Canada, and convenience stores are meeting the health needs of busy modern people by selling simple stick vegetables in South Korea.

Therefore, this website is the most reliable because all the contributors are official public institutions.

In general, the timing of writing information on a website is very important as a reliable element of a website because new research results and the latest updates can make a very decisive difference in people's wise choices and judgments. Thus, confirming when the information currently being read was written (year, month, and date) is one of the key factors in obtaining and determining reliable information.
